Chicken and bacon summer salad

Anne-Marie Minhall has knocked up a hearty salad for summer.

Anne-Marie Minhall says, "Here's something substantial and healthy - just perfect for a June afternoon." 


Ingredients 
(serves four)

400g cooked chicken torn or chopped into rough pieces
400g top quality bacon or pancetta sliced into strips or cubes
Oil for frying
4 tbsp Dijon mustard
4 tbsp red wine vinegar
2 tbsps rapeseed oil
2 little gem lettuces
1 bunch watercress
1 bunch spring onions sliced
200g cherry tomatoes
Seasoning
 
Method

Prepare the salad first by tearing the lettuce leaves and placing in a bowl followed by the watercress, spring onions and tomatoes.

Whisk the Dijon, vinegar and oil together with some salt and pepper and put to one side.

Fry the bacon until it is crispy. Add the chicken pieces into the salad bowl followed by the bacon and the dressing. Toss and serve with some crusty bread and butter.
