Stir-Fried Beef and Noodles

A perfect use of leftovers from the Sunday roast.

Stir-Fried Beef and Noodles

Anne-Marie says, "This weekend - and before we start thinking about festive fayre - I thought you might like to have a look at my recipe for a spicy little dish using leftovers from the Sunday roast." 
Ingredients (serves two)
Slices of cooked beef (goodish thickness)
200g fresh or dried noodles
1 shallot chopped finely
1 fat clove garlic chopped finely
1 piece of ginger (thumb-sized) peeled and finely sliced
2 chillies chopped
1 red pepper chopped
4 or 5 spring onions sliced
Soy sauce to taste
Into a hot pan add the shallot, garlic, ginger and chillies. Stir thoroughly and let them cook for about five minutes before adding the red pepper and the slices of beef.
Add a few really good glugs of soy sauce before popping the spring onions into the pan. Let everything heat through for a matter of minutes and while it's doing so, get your noodles cooked. 
If they're fresh ones, just put them into the pan with beef but if they're dried, cook according to packet instructions and then add to the main pot.
Make a base of the noodles on a warm plate and then pile on the hot beef.
